About your thermometer but that could easily be one too. I know their oil pressure units are switches. As long as you're at 15 psi (exceedingly low IMO) your oil pressure will read in the normal range.

I still vote for air. Are you actively bleeding the system? Any time I have had spikes that resolve themselves quickly it's been an air bubble.

Perhaps you have a grounding issue if your temperature sender is just a switch.

I always try to eliminate the stupid things (like ground issues) first.
