+/- 30 degrees is fine for smoking as well as long as that range is 220-280


Nothing needs to be smoked precisely. At least nothing in a BGE. Cold smoking is an entirely different animal.

I smoked at a religious 220-225 for a decade because I was taught that was the rule... I switched over to a BGE years ago and couldn't keep it below 250 for the life of me. Turned out it was the best pork butt I'd made to date... and it was done two and a half hours earlier!

I've been through stick burners, Yoders, Masterbuilts, and ceramics and I smoke everything... ribs, brisket, butts, wings, mac n chee... everything at 275... or thereabouts. In fact I've got a 10# butt in my ceramic smoker right now chugging away at 280.
