I've found you just need to ...

keep the bottom vent a consistent opening (not too wide) but the top is where you really control the heat during smoking. If the temp goes down I'll open the bottom wider or all a little more fuel. Most of the time it's 225 to 250 so not that hard to control. Good luck.
