The world is different than it was 20, 30 years ago
It's nowhere near unheard of to job-hop even after just a week or a month. So if the lower-paying job offers and there's no end in sight with the higher-paying job ... take it. But keep the process going with the other, and if you get an offer there then take THAT. More pay, better benefits -- no one can begrudge you for that.
Only you know how the variables line up for you, though. You say the lower job is one you can do for a while; is the higher paying job something you'll be sick of in two years? That may factor in. Is there more room for growth in the lower-paying job that may take you farther quicker? Will you burn a bridge you'll need later on if you pull the "yes, I mean no" game with the lower-paying job? Only you know the answers to these questions.
But I think what you came here to find out is if it's still a jerk move to accept a job offer for the bird in hand and then decline it before you start or even quit shortly in due to another job offer. And the answer is: Yes, kinda, but people do it all the time now and it's not nearly as frowned upon as it used to be.
