This is the exact method I have been working on perfecting.


I was actually going to share it, but you covered it for the most part... but I will add...

When searing, preheat your skillet on HOT heat... get that thing VERY hot. Then I sear each side of the steak for like two minutes still under high heat. And make sure your steaks are dry when added(pat off with paper towels), and don't put oil on your skillet. (oil will just burn on that heat anyway)

And be careful in the oven, that part can over-cook the meat if you aren't careful.... so...

To avoid the oven, I came up with an alternate method. I have a heavy lid for my skillet... while searing the steak, I have the lid sitting on another burner(gas) under high heat. I get that thing super-hot too. Then, once seared on both sides, I just put the HOT lid on top of the skillet, turn off the high-heat on the skillet and let it sit on the stove for like 4 minutes. Then, I remove the steak and let it rest.

So far, perfect every time.... bone-in makes it a little more challenging, but it sill works.
