Can you turn a tree into a shrubbery?

Have some volunteer magnolias which will be huge if left growing, but I love it's leaves. Has anyone "topped" the trunk around 3-4' off the ground, and let it grow outward?

Since they're volunteers I'll take the risk since I don't care if they die from this procedure.
