You are assuming a stable atmosphere with zero air movement.
If someone sneezes or coughs and utilizes their hand, it is deflected; however, since the atmosphere is a fluid environment, all it takes is someone walking, moving, ceiling fan, etc. to disburse those droplets.
You can’t blow out a candle because you can’t concentrate the airflow but the volume of air is still released but not as far, until the atmosphere is disturbed. Cover you mouth and cough and then walk across the room, those particles will be pulled across the room with you.
Place an action figure in a large container of water and allow the water to settle. Drop some food coloring in front of that figure and it will stay in that immediately area. Move that figure forward as they are walking and watch the coloring disperse due to the turbulence.
The only effective way is to filter the particles.
