Yes....I use a couple different variations but the basic plan is the same


1) split the bird...like a spatchcock on steroids. remove the backbone and then split right down the middle of the breast. You get two halves.

2) brine. I normally use either an applejuice brine, or a beer brine. I think my favorite is the beer brine using Sam Adams Cherry Wheat, and then using cherry wood for the smoke.
