Some suggestions:


You had some really good ideas.
I like the idea of mixing the teams up with Pennies, that would work well.
Also, tell your most experienced players they are only allowed two touches and then must pass, no shots.
On restarts (throwins, goal kicks,etc. your team should let the other team get possession first, and then be allowed to pursue (here you can also allow that the other team get possession and then get a pass off before aggression from your team)
Drop a player or two so your team is down a player.

Just some ideas. and yes, if the teams are that unbalanced they should be reshuffled. The idea of the sport at this time is get the kids to come back, so it should be fun and challenging, not demoralizing.
