Have her research a Bogle (3 or 4 fund account) and then by the funds on

the vanguard site. No minimums, so she can purchase a few additional shares each month. She can choose from either the mutual fund versions or the ETF versions. If she goes the mutual fund route, she can automatically have the dividends reinvest in additional shares.
