Render the fat trimmings in the smoker and add some back when you wrap


Put the trimmings in a pan and let them soak up some smoke while they render. Once it's all rendered pour it through a strainer to get rid of the remaining solids. Drizzle a bunch of the liquid inside the butcher paper when you wrap. Takes the juiciness and flavor to a another level.
