Three this time - I vary my methods to try to find the best one ...
Stage 1 - Smoke at 260 to 160 degrees
Stage 2 - Place in a foil pan with some apple cider and wrap the entire pan tightly with foil - return to grill until temp hits 200-205 degrees
Stage 3 - Place foil wrapped pan in cooler - cover with towels and let it rest for 2-3 hours. This is where the heavy drinking gets done.
Smells fantastic - my fat neighbor invited herself over and I told her 'social distance yourself'.
