It appeared that way in the last episode (spoiler)

Initially she had three. One was lost to the Night King, who died a second time when the NK was killed. A second dragon was hit ~4 times with those giant crossbow bolts, and fell into the ocean, leaving only the one Dany was flying on. So we've been led to believe there is only one dragon left.

Now if the dragons were off laying eggs and making more dragons...
