Don't forget to raise it to 60 for 2 days before crashing it.
The yeast eats up the butterscotch aromas and flavors at that temp. Important. Just buy a small freezer and you will use it for all of your beers. Competition in my Brewing Guild is severe so we have to be pretty exact on techniques to compete in the quarterly contests. Out of 79 beers, I've only made 4 lagers.
