In my experience, cowboy lump burns really hot..


And peters out quickly. Standard Kingsford works best for me.

What I like to do is fill my chimney starter 3/4 full of charcoal and dump it, onto half my Weber kettle. I then fill it half-full with charcoal, light it, and when ready, pour that ontop of the unlit coals. I close the vents almost all the way and open the vents as the cook goes along. I keep a digital thermometer probe inside to keep a close eye on temps. As temps fall, I open vents.
