WRT Vasily Zaitsev, David L. Robbins wrote "War of the Rats" in 1991


which appears he was featured in it. I never read that book, so I can't say for sure other than what I see in the reviews. In 1973, William Craig wrote "Enemy at the Gates: The Battle for Stalingrad" and I believe the movie is based on that book. It would appear that Zaitsev wrote his memoirs, "Notes of a Sniper," at some point in his life including his duel with Major Erwin Konig. Now what is interesting is that no other historical documents or secondary documents exist. So Zaitsev's account is the only record.
