The main difference is the contract.

I pause YTTV during the summer for like 18 weeks. There's not really any good new TV on and with nicer weather we want the kids outside. Any TV we do want to watch is covered by Netflix, D+, and Peacock. Throw in an occasional premium movie service where a month costs what a tub of popcorn does at the theater, and we save $65+ a month on streaming.

The beauty of Streaming is a la carte. Want to watch Yellowstone but don't mind waiting? Wait until the full series is on Paramount+ then pay for one month and watch the new season. Turn off the subscription until the next season you want to see is up.

That's what attracts the younger generation. I only pay for what I want. If I forget to turn it off for a couple months, I'm out $10 not $400.
