Couple thoughts
Goblin Valley State Park (NE of Capitol Reef) is a ton of fun to explore, and there's a great slot canyon hike (Little Wild Horse) just down the road that's easy to do but still really cool.
Coral Pink Sand Dunes is fairly small and there were a lot of folks tearing around it in ATVs when we were there. That said, if you can catch the sunset light on the sand it's spectacular. Also jumping down the dunes produces a ... unique sound as you sink in.
Driving UT 12 through Escalante NM is supposed to be a real treat but I haven't done it yet.
Just over the border into Arizona, if you're driving back into Utah on US 89A there's an amazing view of the Grand Staircase from the Le Fevre overlook.
Stan's Burger Shack in Hanksville has some great burgers and fries.
I haven't done a ton of exploring in the area but hopefully that helps.
