Vegetarian meals on planes - interesting phenomenon


One of the few indulgences I've made now that I'm in my 40s and have saved up a bit of money is flying first class. I live a fairly frugal life, but I fly first class. Fortunately, I only take 5-6 flights a year.

One of the perks is they provide a hot meal in first class. What's interesting to me, as a vegetarian, is how frequently they have a vegetarian meal as one of the two meal choices.

Occasionally, there is no vegetarian meal (rarely) and so I simply don't eat. Not a big deal. But almost always, one of the two choices is vegetarian. To my surprise, sometimes both meals are vegetarian.

According to statistics on the internets, something like 5-8% of Americans are vegetarians.

How is it that such a small population of Americans (5-8%) has such an outsized impact on the available meals on planes (50%)?
