I don't think this is what you are looking for, but

If you want to go really rustic there are cabins along the Appalachian trail. Typically there is no power nor running water at these. You need someone to join the AT club to use them, but there are worse things to through a little money at.

Some of the parks have cabins too. These are likely more civilized.
