Antelope Canyon is a good call, you can't go wrong anywhere in Zion


in 2019 we went from Vegas to Page, AZ to Monument Valley to Moab to Arches to Canyonlands to Bryce Canyon and ended up in Zion, where we spent the most time. You can easily spend 3-4 days in Zion alone given the large number of hikes of every variety and level. They also have a number of horseback tours if you aren't afraid of horses. If you are not afraid of falling to your death, Angel's Landing is very popular. One thing you might consider visiting between Vegas and Zion is Snow Valley State Park in St George. You can hike a volcano, and there are petroglyphs and other things to see.
