Lids on containers...and I've never noticed any "nastiness"


I'm guessing after a little time, a community of microbes sets up shop in the buckets and keeps everything in balance...similar to an aquarium. Even when debris gets in the cans, it never gets nasty....no smell, no visible sludge or anything. I certainly wouldn't want to drink it without some sort of treatment, but the plants seem to love it.
