I was always partial to either Red Hogs or Pigskins

Either keeps Red or Skins, but not both. They also pay homage to the Hogs, which is kinda their unofficial mascot anyway. I've always thought the best mascots evolve organically (like the Hogs did) vs. emerging from market research firms and focus groups.
