I would likely substitute the ground brisket with ground beef and ground sausage because I don't have two pounds of brisket lying around nor do I have a meat grinder. However, I can easily keep and extra pound of brisket to chop up next time I smoke one and I also have an outstanding BBQ restaurant a half mile from my house where I could buy a pound.
This might happen for NFL playoffs or the Super Bowl.
