I've got a high end kamado grill and use very good lump charcoal.


Nothing beats the flavor and the ability to get it up to 600+ degrees to sear steaks on. I've found that cheap charcoal adds bad flavor but good charcoal gives you just a hint of something extra that you can't get from gas. And you can control temp just as good on a charcoal one but it's definitely more of an art than on gas.
