One of the challenges they face is keeping the studies going for that long.

You're basically asking the study participants to put themselves at risk by not getting a known vaccine in the next couple years (i.e. the placebo group will be unprotected). Some discussion about the ethics of that. Plus there is some data risk to the study itself; i.e. study participants may go down to their local CVS and get a real vaccine outside the study, thus corrupting the study results. The discussion I heard about this is giving the placebo group an option of switching over to the vaccine group, but remaining in the study. So placebo group gets smaller, but at least the data is known.
