My wife just came back from a similar tour

Loved it, really everywhere they went except Belfast. Not sure what sort of stuff you are into, but they saw a ton of beautiful countryside. Giant's Causeway in Northern Ireland, Cliffs of Moher and Ring of Kerry in Ireland. In Scotland, Loch Ness, Stirling Castle, Falkirk Wheel, and Edinburgh in general. And if the wife has read the Guernsey Literary and Potato Peel Pie there's a bunch of stuff on Guernsey to see.
