HIPAA doesn't mean no one can ever talk about someone else's health. It's really mostly about health care providers and insurers (covered entities). If you tell me you have COVID-19 and I tell someone else, I have not violated HIPAA. I can't really see how a coach is a covered entity (but I'm no expert). Now the way the *coach* found out could be a HIPAA violation I guess (if a doctor told a coach...the doctor may be in violation). But if a player gave a coach the info, I'm not sure the coach has to keep it private (according to HIPAA anyway...there could be other ethical discussions)
