I haven't been reading much about Holzhauer or watching every minute...
.... but I wonder, to use the phrase loosely (and I hope this doesn't bother anyone), if he's "on the spectrum" in some way. He appears to have a phenomenal memory, and his interactions are a little awkward. He's not "normal." He's more than just smart and well-read with a broad base of experiences. There's something else going on there.
Whatever his differences are, they're tailor-made for a game like Jeopardy, and apparently, for gambling, since that's what he does for a living. He knows and can deploy a lot of facts and figures, and he does it fairly emotionlessly -- a big key to gambling.
Plus, he's got a super-fast trigger finger on the buzzer. I was surprised last night when the guy who challenged him was buzzing in earlier. That's rare for Holzhauer.
