Yes. A less than 1 year old deer is definitely more tender.


Like veal tender but flavor to me isn't quite as good. I occasionally shoot them on damage control for one of the farm properties I hunt. Not my favorite thing to do because I do feel a little guilty doing and it is the same work for less payoff but it's part of the deal to hunt this property. Once a deer gets through the first year though the muscle groups and tendons toughen up so by 1.5 yrs old they are all mostly the same in terms of taste/texture. A rutting or older buck or older doe can be more "gamey" in flavor as can an acorn vs. ag deer but nothing the average person tends to pick up and perfectly fine for jerky/ground type cuts. If I am strictly looking for taste I'll look for a 2.5 to 3.5 yr old doe. Good taste and usually can get 40 to 45 lbs of meat off them vs. half that from a yearling. Bucks will yield 55+ depending on age and what they are eating.
