It varies from wrestler to wrestler

Pretty much each of them know how to eat properly to maintain weight, and if they need any "coaching" on that, they get it from the coaches or veteran team members. But how much each person has to cut and how much their weight fluctuates in between competitions varies from guy to guy. They weigh in all the time, so the coaches know on Monday if a guy is off by 9 pounds and is wrestling on Saturday, for example, and they want to see the progression down over the week. They also each have their own histories of either cutting easily and under control or cutting poorly and missing weight or wrestling badly because of the cut. And the coaches have that insight too. So if one wrestler is over by 8,10, 12 lbs., it could be viewed as no big deal based on his history, while it could be viewed as a very big deal for someone with a less than stellar history with his weight.

When you see two guys traveling for a dual at the same weight, it sometimes
means (although not the only reason) that the coaches are concerned that the starter might not make the final cut.
