Death sentences have been traditionally carried out at or just after midnight because the death warrant issued by the judge is good only for that specific day. As soon as it's midnight, the warrant is active and they can carry out the sentence. If there are any legal maneuvers outstanding, it minimizes the chances of those interfering with the administration of the sentence. If there are technical issues (trouble with equipment, etc.), it gives them the full 24 hours to carry out the sentence.

Recently, most states who have the death penalty have moved away from this due to the stress it puts on the staff, witnesses and condemned. If they don't get it right the first time, likely they are not going to get a second chance anyway.
