But I guess I see the full legal need to law enforcement to have access to a phone. It's not like law enforcement is just going around wanting to access what's on our phones for the sake of seeing it.

Naive. This is exactly what's going to happen. Of course they'll justify it in very serious terms, but in the end, it's effectively a power grab.

But more importantly, the bad guys (terrorists, foreign govts) will have access to our phones.
