Similar to why you take the ball 2nd in overtime...
It's an obvious benefit in overtime, yet a more subtle benefit during regulation. The principle still holds true, that deferring offensive possessions will give you a clearer idea of how aggressive you need to be - especially as the half ends and the 2nd half begins.
Some of the best coaches will retain the last offensive possession of the first half AND score on their first possession of the 2nd half. That's the only way to score 14 consecutive points without the other team getting possession - and there's no other way to do that other than an onside kick recovery or muffed return.
