I made smoked queso in a dutch oven last weekend on my Kamado Joe ...


to say it was tasty is an understatement. And it took all of 20 minutes to prep and 45 minutes to smoke. Recipe doesn't say it but I used hickory, which I rarely use because it tends to be too strong. However, for this recipe it worked great.
