Does anyone cook with Poblano Ancho peppers?


Bought one of these plants after my habanero seeds didn't germinate, and I'm curious how to cook it. Most of the things I've read say to either dry it, or stuff and bake it. Can I dice a fresh one to put in a pot of chili?

The reason I'm asking is the plant only has one near mature chili on it, so trying to stuff and bake one chili is probably a lot of work for one stuffed pepper.
