are using bots to find stores that have inventory and immediately buy them all. It's not the same as an Xbox controller where A) there are about 50 different "official" version and B) there are plenty third party options. If you want a Switch (and not the cheaper, less functional Switch Lite) then you have to get lucky and beat out the scalpers. Nintendo is working on increasing supply but I imagine that will take time.
