Look for cuisines that feature vegetarian as opposed to meat replacements


I've never liked subbing tofu for meat or veggie patties or any of that. I'd much rather have the actual meat. However, there are a lot of vegetarian Indian and middle eastern dishes that taste great because they started as a vegetarian dish as opposed to making a meat dish vegetarian. Malai kofta and masala dosa are just two Indian examples.
