I would liken it more to an (almost) unpaid internship....
You're working your ass off, and getting valuable experience (education), but getting little to nothing that is fungible. That experience/education and $5 will get you a big cup of coffee.
And I think internships like that are exploitative. Only those with a support structure (e.g. wealth) can afford to take them. Not a true analogy, of course, but the NCAA athletic system is similarly exploitative.
