UNC got up to 10th in the CFP rankings with one loss before losing to Clemson in the ACC Championship. An undefeated UNC would have been around 6th and would have moved into the top 4 with a victory over Clemson.

I really think that the CFP committee would have a hard time leaving out an undefeated P5 team regardless of who it is. Granted, if it was Duke or Vandy, they would be the 4th seed, but it would be hard to pass over an undefeated P5 team altogether.
