Question about remodeling contractors working in your house.

Related to lag's bathroom remodeling question below. Obviously the contractor will need to gain entry to the house for a few weeks, presumably while you are at work. How is the contractor's access to your house typically handled? Just give them a key and they have free reign? Change the locks afterward? Train a guard dog to make sure they don't take something they shouldn't?
