Pro scouts care very much about your willingness and ability to defend. Lots of people can score. But you have to be able to defend. It's why someone like Seth Allen can't get a sniff.

If their true aspirations are to play at the next level, scouts don't care one bit about stats. Film and live scouts tell the story. Just look at Zach Collins from Gonzaga, not much on the stats side but scouts knew he would translate well.
